Quinoa Mushroom Salad

Prep Time: 10 minutes | Cook Time: 1 minute | Serves 4

½ cup quinoa, rinsed

¾ cup water

¼ teaspoon salt

½ carrot, peeled and shredded

½ cup green onions

½ cup cremini mushrooms, diced

1 tablespoon lime juice

1 tablespoon vegetable oil

1 tablespoon freshly grated ginger

1 tablespoon sesame oil

A pinch of red pepper flakes

Add the quinoa, salt, and water to the Instant Pot.

Secure the lid and select the “Manual” function with high pressure for 1 minute.

After the beep, do a quick release and remove the lid.

Meanwhile, add the remaining ingredients to a bowl and mix them well.

Add the cooked quinoa to the prepared mixture and mix well.

Serve as a salad.
