Ingredients :
Marinara Sauce
1 15-ounce can diced tomatoes
1 teaspoon garlic powder
1 teaspoon dried basil
½ teaspoon oregano
⅛ teaspoon salt
1 tablespoon robust olive oil
Meatballs
¼ pound ground turkey
¾ pound very lean ground beef
1 tablespoon milk
½ cup torn bread pieces
1 egg
¼ teaspoon salt
½ teaspoon dried onion
1 teaspoon garlic powder
¼ teaspoon smoked paprika
¼ teaspoon crushed red pepper
1½ teaspoons dried parsley
¼ teaspoon oregano
2 teaspoons Worcestershire sauce
Sandwiches
4 large whole-grain sub or hoagie rolls, split
toppings, sliced or chopped:
mushrooms
jalapeño or banana peppers
red or green bell pepper
red onions
grated cheese
Directions :
1. Place all marinara ingredients in saucepan and bring to a boil. Lower heat and simmer 10 minutes, uncovered.
2. Combine all meatball ingredients in large bowl and stir. Mixture should be well blended but don ’ t overwork it. Excessive mixing will toughen the meatballs.
3. Divide meat into 16 equal portions and shape into balls.
4. Cook the balls at 360 ° F until meat is done and juices run clear, about 9 to 11 minutes.
5. While meatballs are cooking, taste marinara. If you prefer stronger flavors, add more seasoning and simmer another 5 minutes.
6. When meatballs finish cooking, drain them on paper towels.
7. To assemble subs, place 4 meatballs on each sub roll, spoon sauce over meat, and add preferred toppings. Serve with additional marinara for dipping.
