Fried Bananas

Prep Time: 10 minutes | Cook Time: 12 minutes | Serves 4-6

Ingredients : 

½ cup panko breadcrumbs
½ cup sweetened coconut flakes
¼ cup sliced almonds
½ cup cornstarch
2 egg whites
1 tablespoon water
2 firm bananas
oil for misting or cooking spray

Directions : 

1. In food processor, combine panko, coconut, and almonds. Process to make small crumbs.
2. Place cornstarch in a shallow dish. In another shallow dish, beat together the egg whites and water until slightly foamy.
3. Preheat air fryer to 390 ° F.
4. Cut bananas in half crosswise. Cut each half in quarters lengthwise so you have 16 “ sticks. ”
5. Dip banana sticks in cornstarch and tap to shake off excess. Then dip bananas in egg wash and roll in crumb mixture. Spray with oil.
6. Place bananas in air fryer basket in single layer and cook for 4 minutes. If any spots have not browned, spritz with oil. Cook for 2 to 4 more minutes, until golden brown and crispy.
7. Repeat step 6 to cook remaining bananas.
